Basic Information

We are a third-generation family farm in our 18th season of production. We are located in North Central Wisconsin (Near Athens WI). We have a highly diversified Certified Organic farm which includes a 20 week Community Supported Agriculture Program; vegetable, herb, fruit and flour production, grass fed beef, pastured pork and eggs, organic grains, frozen pizzas, and farm to table pizzas April-November. Our inter-generational farm was founded in 1948. Tony’s children will be the fourth generation, and the farm is currently expected to last, 1,002 generations, at least.

Vegetables

We raise over 8o types, and 200 varieties of Certified Organic vegetables, fruit and herbs at our farm - everything from apples to zucchini and everything in between! Our vegetables are grown for our 150 family CSA, the Wausau Saturday farmers market, pizza night farmers market stand, and several restaurant and small grocery stores.

Frozen Stoneys

An outgrowth of pizza on the farm, we produce and sell frozen pizzas year round for sale at the Wausau Farmer’s Market, Sawmill Brewery and Stevens Point Area Co-op. Like at pizza night everything on these pizzas comes from the farm including the wheat and syrup for crust, tomatoes and herbs for sauce, pigs for meats, and mushrooms and veggies for toppings. We purchase local cheese form Nasonville Dairy in Marshfield, WI and speciality cheeses from around the state. Maple Syrup

Maple Syrup production is headed by Tony's father Ed Schultz from the tapping to bottling. We work with him to produce high quality amber syrup cooked over wood which imparts a traditional deep flavor. We bottle our syrup in glass. For large purchase or commercial scale pricing call us. Pastured pork

Stoney Acres Farm has three-four sows and raises pigs on pasture April-December and in large indoor pens in winter time.  They live in social family groups from birth. Our pigs are fed organic grain, organic fruit and vegetables, hay (in winter) and pasture in summer.  Our pigs are Berkshire, large white and/or Berkshire crosses - flavorful pork.

Pork is sold by the 1/2 or by individual cut. We can make packages with your favorite cuts for pick up at the farm or farmers market. We Process our meat  locally at Geiss Meats in Merrill. Our Bacon and cured meats are now nitrate free.  The cost for a half or whole pig is $4.50/lb and you pay the processing fee. For pricing on individual cuts or special orders please call. This is the cost for the actual poundage of meat not the hanging or live weight, so you get the amount you order. 

Grass Fed Beef

Our 100% grass-fed meat can be purchased by the cut at the Wausau Farmers Market or the Farm or purchased in small mixed packs (25 or 50lbs)  at $6.50/lb or larger mixed packs quarters (about 100lbs), Halves (about 200 lbs) at $6/lb or whole animals (about 400lbs), plus the butcher fee. These weights are the actual weight of the meat you receive not hanging weight. Ground beef is $6/lb and is around 95% lean. 

Our animals are raised according the USDA Regulations, but our meat is not certified organic as we choose to have it butchered locally rather than driving animals a long distance for certified organic meat. Most of our meat is processed at Geiss Meats of Merrill where it is dry aged for at least 2 weeks adding to the wonderful flavor and texture (most grocery store meat is higher in fat but wet packed which reduced the flavor). Our animals are only butchered during early summer and early fall after the largest flushes of cool season grasses and clovers which adds to the flavor and nutritional quality of the meats. If you would like to be added to our meat order list (pick up in early July) please email us at stoneyacrescsa@gmail.com. 

THE ANIMALS

The cows and steers are mostly Galloways but our herd also contains Scottish Highland and some Herford-Galloway crosses. We choose breeds that do well on pasture, are good natural mothers, have good marbling and meat quality, and are hardy in Wisconsin weather. 

HOW WE RAISE OUR ANIMALS

Our beef are 100% grass-fed meaning they eat no grain over their life course. Our animals are kept in herd, on grass and clover pastures between May and December and Fed hay made from the pastures during winter months. Our animals are not confined and are managed in a rotational grazing system which is optimal for both their own health and the health of the land. During winter months they have access to both a loose housing barn with food and water and snowy pastures where they receive hay. Animals are raised to an average age of 24 months and are naturally weaned by their mothers. 

Sustainability

Stoney Acres Farm is centered around the goal of increasing environmental sustainability for our farm, community and food system. Here are some of the specific steps we are taking around sustainability!

Certified Organic Production - The USDA has very specific and strict standards which prohibit the use of synthetic fertilizers and pesticides; require diversity in crop rotation; Soil and Water testing; the use of specific livestock methods and the use of organic feeds as well as much much more. We have been using organic methods since we moved here and after observing the three year transition period we became a USDA Certfied Organic Farm in 2009. We continue to certify because we believe that certification ensures a specific standard for eaters everywhere.  We also feel we go beyond this standard in many ways.

Rotational Grazing and Pastured Meats - All of our animals are raised on pastures and all ruminants are 100% pasture and grass-fed meaning their feed is all pasture during months when grazing is possible - usually April-November- and the receive hay during the winter. All non-ruminant animals are fed organic grains (all chickens receive 100% certified feed) produced on our farm or sourced locally and/or non-GMO non-sprayed grains from our neighbors farm (for pigs) to supplement their pasture consumption. In the winter we collect animal manure which is composted at hot temperatures and used to fertilize fields. Our animals are given spaces and shelters which fit best with their own natural behaviors and they are treated in a humane manner throughout their life course.

Renewable Energy -  Spring 2013 we installed a 8kW photo-voltaic solar panel system on our packshed barn and a 90% efficient Wood gasification system to heat our packshed, our greenhouse (for 2014), and all water for the commercial kitchen. We are excited to plan a significant solar expansion for the 2023 season that will allow us to eliminate our net usage! We use only fallen wood from our own 20 acres of woods and wood ash is incorporated into our composting system. In the next five years we also expect to add oil production for food and tractor fuel and to convert to all hybrid and electric vehicles (right now our car is a hybrid electric).

Biodiversity  - We strive for a high level of diversity on our farm from the many things we grow to a diversity of habitat for wild animals. Our farm includes planned insect and wild animal habitats as well as unplanned  natural areas surrounding all farm fields. We grow over 185 varieties of plants, over 80 types of crops and value diversity of everything from tomatoes to forests.

Low Food Miles - Stoney Acres uses semi-centralized distribution for CSA boxes and limits deliveries to a 35 mile radius from the farm.
